Abstract
Our work aimed to compare the most important characteristics of unifloral honeys and their parent plants; these were water content, conductivity, acidity, antioxidant capacity by FRAP method as well as total phenol content. We found that antioxidant capacity and total phenol content were in close correlation in case of yellow sweet clover and hawthorn; such relationship, however, was not detectable in the case of honeys. We further found that conductivity of yellow sweet clover, tilia and hawthorn honeys comply with the food safety regulations, but fennel showed values higher than acceptable. We could conclude that biologically active materials are only partially present in the honeys, since during the formation of various types of honey new active materials may appear.
