Abstract
Der Gesamttgehalt an Pigmenten wurde in gemahlenem Gewürzpaprika nach der Benedekschen Methode mittels eines Spektrometers durchgeführt. Zur Bestimmung eignete sich am besten die Wellenlänge 477 nm, wobei die wichtigsten Pigmentkomponenten des Gewürzpaprikas einen Isoabsorptionspunkt aufweisen. Der Gesamtgehalt an Pigmenten wird unverändert als Capsanthin angegeben. Total pigment contents of powdered paprika samples were determined by the Benedek metod, with the use of a spectrophotometer. The wavelength 447 nm at which the pigment components of importance of powdered paprika exhibit an isoabsorption point proved to be the most suitable for the determination. Total pigment contents are then given as capsanthin as usual.
