Abstract
Es wird festgestellt, dass-nach den Untersuchungsergebnissen-die Verfälschung von Mischmilchen bei einer wesentlichen Wasserzugabe (über 10%) ohne Untersuchung eines im Stall entnommenen Musters eindeutig bestimmbar ist. In diesem Fall ist die Kenntnis des spezifischen Gewichts, des Brechungsindexes und des Gehaltes an fettfreier Trockensubstanz zur Feststellung der Wasserzugabe genügend, während bei einer Zugabe von Wassermengen über 20% praktisch sogar die Kenntnis eines einzelnen herausgehobenen Parameters genügt. It was found that when mixtures of cow milk are adulterated with water to an extent above 10%, this adulteration can be determined unequivocally on the basis of the data of laboratory investigations without the use of a sample taken in the stall. For such determinations the knowledge of the specific gravity, of the refraction value and of the content of fatless dry matter is satisfactory wheres in case of adulterations with great amounts of water (above 2 0%), practically also the knowledge of only one outstanding parameter is sufficient.
