Abstract

The method for the measurement of the effectiveness of antioxidants developed by Cort and based on the determination of oxygen consumed in a peroxidase reaction catalysed by hemoglobin was carried out by the authors with the use of an equipment which measured the amount of dissolved oxygen. On applying trioleate as substrate, the effectiveness of several antioxidants was compared with each other. The index of the time required to attain a 50% saturation with oxygen referred to that of BHT proved to be a reliable indicator of the effectiveness of antioxidants. Die von Cort entwickelte, auf der Bestimmung des in der durch Hämoglobin katalysierten Peroxidasereaktion verbrauchten Sauerstoffes fussende Methode zur Untersuchung der Wirksamkeit eines Antioxidans wurde mittels einer Einrichtung ungarischer Erzeugung zur Messung des gelösten Sauerstoffes durchgeführt. Unter Anwendung von Trioleat als Substrat wurde die Wirksamkeiten mehrerer Antioxidanten miteinander verglichen. Die unter Verwendung der zum Erreichen einer 50%iger Sauerstoffsättigung benötigten Zeit auf BHT bezogene Indexziffer ist eine gute Messzahl der Wirksamkeit der Antioxidante.
