Abstract

Eine Übersicht wird gegeben über die in der Literatur beschriebenen gelelektrophoretischen Methoden der Lebensmittelanalytik. Die Ergebnisse einer mit Mitarbeitern durchgeführten vergleichenden Untersuchung der Bestimmung des nicht von Fleisch stammenden Proteingehaltes von Fleischprodukten werden dargestellt, und die Untersuchung mittels Polyakrylamid-Gelelektrophorese von vier in Ungarn angebauten Weizensorten wird erörtert. Gel electrophoretic methods of food analysis described in literature are biefly reviewed. The results of a collaborative study on the non-meat protein content of meat products are tabulated and discussed, and the polyacryl-amide gel electrophoretic examination of four wheat varieties grown in Hungary is described.
