Abstract

Die Ergebnisse einer mehrjährigen Forschungarbeit über die auf Turbidimetrie begründeten Schnellverfahren zur Bestimmung des Fettgehaltes werden zusammengefasst. Durch eine entsprechende Modifizierung des ursprünglich zur Milch entwickelten Verfahrens, welches auf eine Fällung des Milchfettes unter kontrollierten Umständen fusste, war es möglich die Anwendbarkeit des Verfahrens zur Untersuchung des Fettgehaltes von zahlreichen Produkten der Milchindustrie, hauptsächlich von sauren Milchprodukten und von versüssten Yoghurtpräparaten auszuweitern. The results of researches carried out for several years concerning the quick methods of fat determination based on turbidimetry are summarized. On applying an adequate modification of the produre developed originally for milk analysis based on the precipitation of milk fat under controlled conditions, it was possible to extend the applicability of the method to the investigation of the content of a number of products of the dairy industry, mainly of acid dairy products and of sweetened yoghurt-base preparations.
