Abstract

Die Verfasser prüften die Veränderung der Kohlenhydratfraktionen des gezüchteten Champignons im Laufe der Lagerung. Bei der Untersuchung der quantitativen Veränderungen fanden sie, dass die Menge der einzelnen Kohlenhydratfraktionen abnimmt. Ihre chromatographischen Untersuchungen lassen erkennen, dass der Abbau, die Abnahme der Reserve-Nährstoffe successive erfolgt. Changes in the carbohydrate fractions of cultivated champignon were investigated during storage. The examination of the quantitative changes showed decreases in the amount of the single fractions of carbohydrates. It was proved by chromatographic investigations that the decomposition and consumption of reserve nutrients is a continuous process. Les auteurs ont étudié le changement des fractions des hydrates de carbone du champignon cultive survenant pendant le stockage. Au cours de l’étude des changements quantitatifs ils ont trouvé que la quantité des diversés fractions des hydrates de carbone ä diminué. Leurs essais chromatographiques montrent que la décomposition des matiéres nutritives de réserve est graduel.
