Abstract
Verfasserin bestimmte den Gehalt an Vitamin B6 von mehr als 70 ungarischer Lebensmitteln mit mikrobiologischer Methode. Es wurde auch zweierlei Frühstück, ein Mittagmahl und ein Abendessen auf Grund genauer Materialvorschriften in rohem und fertigen Zustand geprüft. Die Untersuchungen erwiesen, dass - obwohl die küchentechnischen Vorbereitungen zu einem hohen Verlust an Vitamin-Bc führen - noch eine beträchtliche Menge zurückbleibt. The content of vitamin Be was determined by the author in more than 70 Hungarian foods, using the microbiological method. Two types of ready-made breakfast, one type of lunch and one type of dinner were also investigated in unprepared and in ready-made state,on the basis of an accurate material prescription. The investigations proved that, though a considerable loss of vitamin B6 occurs due to the cookery technique applied, the residual quantities are still appreciable. On accepting the daily requirement of man to be 2 mg, it was found that the requirement of vitamin Be is covered by the normal daily food intake, independently of the seasonal conditions, even when the vitamin synthesizing activity of the intestinal flora is not taken into account.
