Abstract

Der Verfasser beschreibt auszugsweise seine mit der Verbesserung <jes vornehmlich für Getreide- und Mehluntersuchungen konstruierten und Valorigraph benannten Apparates verbundene Forschungsarbeit. Die Versuche erstreckten sich auf die Temperaturabhängigkeit der Teigkonsistenz, auf den Zusammenhang der Konsistenz und Wasserzufuhr, auf Versuche mit Dämpfungsöl, für Grenzen der Wasseraufnahme, auf Bandanalyse, Schalenprofiluntersuchungen, Kalibration von Gewichtskurven, Prüfung der Aufheizung, Temperaturbeständigkeit usw. The researches carried out in the course of the development of the Valorigraph, an instrument devised mainly for the investigation of cereals and flours are described. In these researches, the dependence of the consistency of dough on temperature, the correlations between consistency and the amount of water added, the damping oil, the limits of water-uptake capacity, the on-line analysis, the investigations of the profile of dishes, the calibration with weight curves, the investigations of the heating-up and of the maintenance of temperature levels etc. have been studied. L’auteur décrit sommairement les examinations au’il a fait au cours du développeinent de l’instrument nőmmé valorigraphe construit surtout pour l’examination des grains des céréales et de la faríné. II s’est occupé en premier lieu de l’influence de l’échauffement sur la consistance de la päte, des corrélations entre la consistance et l’addition de l’eau, des huiles tempérantes, des limites du pouvoir d’adsorption pour l’eau, de (’analyse en bandes, des examinations concernant le profil des écuelles, de calibration par des courbes du poids, de l’examination de l’échauffement et de la tenue de la température, etc.
