Abstract

Die Elektrophorese kann bei der Analyse von Kohlenhydraten, Verbindungen mit sauerem oder phenolischen Charaker, sowie Farbstoffen der Lebensmittel erfolgreich angewendet werden. Anhand dreier Beispiele aus der Praxis: quantitative Analyse eines Polysacchaiid-Hydrolysates, Trennung der Mischung zweier Ketosäuren und Trennung des Karamell-Farbstoffes im präparativen Massstabe wird dies demonstriert. Electrophoresis can successfully be applied in the analysis of the acidic and phenol-type compounds of food carbohydrates and in that of dyes. As three examples of analytical practice, the technique of the quantitative analysis of a polvsaccharide hydrolysate, the separation of a mixture of two ketoacids and the isolation, on a preparative scale, of the caramel dye are presented. L’électrophorjse pent étre employée utilement pour l’analyse des composants acides et phénoliques des hydrates de carbone des denrées alimentaires, ainsi que pour l’analyse des matiéres colorantes. 11 présente dans le cadre de trois exemples tirés de la pratique I’analyse quantitative d’un hydrolysat d’un polysaccharide, la separation du melange de deux céto-acides et la séparation ä l’échelle préparative de la matiére colorante caramélique.
