Abstract

Die Verfasser geben eine kurze Übersicht über einzelne Theologische Eigenschaften von Milch, Fruchtsaft und Tomatenkonzentrat, sowie über die für die Bestimmung der Theologischen Kennzeichen geeigneten Methoden. Weiterhin befassen sie sich ausführlicher mit den Theologischen Eigenschaften der Schokoladenmasse und den dieselben beeinflussenden Faktoren. A short survey is given by the authors of some rheological properties of milk, fruit juices and tomato purées, and also of the methods suitable for the determination of the rheological characteristics. The rheological properties of the chocolate mass and the factors affecting them are discussed in detail.
