Abstract

The control tests carried out in 1970 — 71 by the Inspectorate for Meat and Milk of the Station of Veterinary Hygiene in Budapest and the results of the laboratory investigation of about 16,000 samples of meat and meat products withdrawn annually are prestented. In these investigations the suitability or unsuitability of the examined foods from the aspect of public and veterinary hygiene, and of nutrition biology is established. Der Verfasser bespricht die Kontrolltätigkeit der Inspektion für Fleisch- und Milchuntersuchung der Hauptstädtischen Tierhygienischen Untersuchungsstation in den Jahren 1970 — 71, und auch die jährlich cca. 16 000 Laboratoriumsprüfungen von Fleisch und Fleischwaren. Mit Hilfe dieser letzteren wird die Genußtauglichkeit bzw. -untauglichkeit der in Frage kommenden Lebensmittel vom sanitätlichen und tierhygienischen, sowie nahrungsbiologischen Standpunkt betrachtet festgestellt. L’auteur passe en revue les controles cffectués dans les années 1970 — 71 par rinspection de Viandc et de Lait de la Station Métropolitaine d’Hygicne Vétérinaire et rend compte de l’analyse d’un total d’environ 16 000 échantillons de viande et de produits carnés. Ces analyses servent ä établir la consomi. abilité ou non-consommabilité des denrées en question des points de vue de l’tíygiéne publique, de l’hygiéne vétérinaire ainsi que de la biologie alimentaire.
