Abstract

Die Verfasser untersuchten 105 Fleischwaren (96 in Cuba und 9 in Ungarn verfertigt) von dem Standpunkte der bakteriologischen Reinheit: Die faschierten Knödel waren im allgemeinen von annehmbarer Qualität; die verschiedenen bakteriologischen Kennzahlen aufgeschnittener und fermentierter Erzeugnisse wiesen eine grosse Streuung auf, (z. B. die Gesamtkeimzahl war zwischen 103 — 10G/g). Als Ursache der hohen Keimzahlen erwies sich hauptsächlich die unbefriedigende Lagerung. 105 varieties of meat products (96 Cuban and 9 Hungarian products) were investigated from the aspect of bacteriological purity. Of the examined products the quality of the balls of chopped meat was in general acceptable whereas the bacteriological indexes of sausages and fermented meat products exhibited great scattering (e. g. total germ counts from 103 to 10° per gram). The observed high germ counts were generally due to unsuitable storage conditions. Les auteurs on examiné, du point de vue de la pureté microbiologique, 105 produits carnés (dönt 96 de production cubaine et 9 de production hongroise). Panni les produits les boules de viande hachée étaient, en général, de qualité acceptable, les indices bactériologiques des produits carnés fermentés et de charcuterie montraient, cependant, de déviations considérables (p. e. germes toeaux entre 103 et 10G par gramme). La cause des nombres de germes élevés était, tn général, l’entreposage inapproprié.
