Abstract

Verfasser behandeln die mit der Theologischen Fettuntersuchung verbundenen theoretischen Fragen. Weiterhin werden die zumeist angewendeten grundliegenden Messprinzipien, wie auch die Messapparate besprochen. The theoretical problems correlated with the rheological investigation о edible fats are discussed by the authors. Further, the fundamental principles of measurement and the instruments of measurement frequently applied are described. Les auteurs s’occupent des questions théoriques concernant l’examen rhéologique des graisses. Us passent ensuite en revue les principes des methodes d’analyse les plus usitées et les instruments de mesure.
