N2  - Essential oils are concentrated extracts from plants, recognized for their intense aromas and therapeutic properties. They are used in aromatherapy, cleaning (in natural cleaning products for their antimicrobial properties), natural fragrances and also as preservatives in meat and cheese industries. Essential oils obtained by hydro-distillation from flowers and seeds of cumin were investigated. Gas chromatography-mass spectrometry (GC/MS) was used for the identification of the volatile compounds. The Folin-Ciocalteu method was chosen for determination of total phenol content (TPC). The antioxidant activity of C. cyminum essential oils were assessed using 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay. Essential oil yields were 1.75% in flowers, and 3.63% in seeds. Major components of the oils were ?-terpinene (20.2%) in flowers and cumin aldehyde (36.1%) in seeds, respectively. The total phenol content of the essential oils of different parts of cumin ranged from 10.3 to 17.8 mg of GAE/g of dw. The antioxidant activity of the cumin essential oils obtained from flowers was found to be lower than synthetic antioxidant butylated hydroxytoluene (BHT).
