Verschiedene, zur Bestimmung des Fettgehaltes von Produkten der Fleischindustrie dienende Methoden (Extraktion nach Soxhlet, Messung m it Butyrometer, Refraktometrie durch Messung des Brechungsindexes) wurden miteinander verglichen. Die theoretischen Grundlagen der refraktometrischen Methode und die Durchfürung dieser Methode sind ausführlich beschrieben, und die mathematische-statische Auswertung der Messergebnisse ist dargestellt. Es wird auf Grund der Ergebnisse festgestellt, dass die refraktometrische Methode zur Bestimmung des Fettgehaltes geeignet ist, zur entscheidenden Untersuchungen aber as Soxhletsche Verfahren herangezogen werden muss. Various methods for the determination of the fat content of products of the meat industry (extraction according to Soxhlet, measurement by butyrometer, refractometry based on the measurement of the refractive index) were compared with each other. Fundamental principles, procedures and the mathematicalstatistical evaluation of the measured data are described in detail. It was found on the basis of these results that the refractometric method is suitable for the determination of the fat content. However, for decisive determinations the Soxhlet method must be applied.
