Abstract

Eine Methode wurde zur Bestimmung der Qualität des Glühweins auf Grund der Messung des titrierbaren Säuregehaltes des Glühweins und des Ausgangsmaterial dienenden Weins, sowie der Messung der Brechungsindices entwickelt. Nach den Untersuchungen können auf Grund der Verhältnisse des Kaliumgehaltes und des Säuregehaltes des Glühweins und des Ausgangsweins sogar die eventuellen Austausche der Ausgangsweine durchgeführt werden. Die Bestimmung des Leistungswertes von verdünnten Sirupen und verdünnten Weinen ist auch auf Grund der Verhältnisse ihres Kaliumgehaltes bzw. ihres Säuregehaltes durchführbar. A method was developed for the determination of the quality of mulled wine on the basis of the measurement of thetitratable acid contents of the mulled wine and of the wine used as initial material, further of the measurement of the refractive indices. According to the investigations even the eventual changes of the initial wine can be probably carried out on the basis of the ratios of the potassium contens of the mulled wine and the initial wine. The determination of the efficiency value of diluted sirups and wines can be performed also on the basis of the ratios of their potassium content and of their acid content, respectively.
