Mit Rücksicht auf die neuen Geräten der Küchentechnik (Grillröhre, Dampfkochtopf) eine Modifizierung der Kochprobe wird vorgeschlagen. Die mit einem in Aluminiumfolie eingepackten Muster durchgeführten Koch- und Backproben, die Erfassung der Riechstoffe bei den unterschiedlichen Temperaturen entweichenden Riechstoffen und die Kochprobe des gehackten Fleisches werden ausführlich beschrieben. Schliesslich befasst sich der Autor auch mit der Erkennung wirksameren von anderen Abnormitäten der Gerüche. Die Wirksamkeit des modifizierten Verfahrens wird mit den mittels der traditionellen Kochprobe erhaltenen Ergebnissen verglichen. Die Leistungsfähigkeit der letzgenannten Probe war nur etwa 50%-ig. With respect to the novel devices of culinary technique (grill for baking, pressure-cooker), a modification of the cooking test is suggested. The cooking and baking tests carried out with a sample packed into an aluminium foil, the collection of odour substances volatilized at various temperatures and the cooking test of minced meat are described. Lastly, also the recognition more efficient of other abnormities of odours is discussed. The efficiency of the modified method is compared with that of the traditional cooking test, on the basis of their results. The efficiency of the latter is only about 50%.
