In der Bierbrauerei wird zur Bestimmung des Eiweissgehaltes von Gerste Malz und Weizen der Prometer benützt. Das Prinzip des Verfahrens bestellt darin, dass die Mahlprodukte der genannten Kornarten aus Farblösungen — ihrem Eiweissgehalt proportionale-Mengen binden. Die Verfasser ersetzten die ursprünglichen Crocein Orange Lösungen des Prometers mit Orange G Farblösungen von entsprechender Konzentration und verwendeten dieselben zur Bestimmung des Eiweissgehaltes der Mahlprodukte von Gerstenmalz und Weizen. The so-called pro-meter is used for the determination of the protein content of barley, malt and wheat applied in breweries as industrial raw material. The method is based on the fact that on treating dye solutions with the pulverized samples of the mentioned cereals, amounts of dye solution proportional with the protein contents are bound by the cereals. The croceine orange solutions originally devised for the pro-meter (protein-meter) were substituted by the authors with Orange G dye solutions of adequate concentration which proved to be suitable for the determination of the protein content of ground barley malt and wheat. L’industrie de la biére de sert du prométre pour l’examination de la teneur en protéines de borge, du malt et du blé employés comme matiéres premieres dans les brasseries. Le principe du procédé c’est le fait que la mouture des céréales mentionnées adsorbe du colorant á partir d’unc solution colorée en proportion de sa teneur en protéines. Les auteurs ont remplacé les solutions originales de crocéine-orange du prométre par des solutions d’Orange G en concentration convcnable et elles les ont employées pour le dosage de la teneur en protéines des moutures d’orge, de malt et de blé.
