Abstract

Der Verfasser prüfte die auf Messung der Extinktion des Fe3+ Komplexes beruhende Bestimmungsmethode für Milchsäure. Er untersuchte — mit mathematisch-statistischen Methoden den Zusammenhang zwischen Milchsäuregehalt und titrierbarer Acidität von spontan sauer gewordener Roh- und pasteurisierter Milch. Er stellte fest, dass mit dieser Methode die Abstumpfung der Milch mit 1 SH Genauigkeit bestimmt werden kann. The method of determination of lactic acid based on the measurement of the extinction value of the Fe3+ lactate complex has been investigated by the author. The correlations between the lactic acid content and the titratable acidity of spontaneously acidified raw milk and pasteurized milk were examined by mathematical statistical methods. It was found that, on employing this method, the buffering of milks can be detected with an accuracy of 1 SH. L’auteur a étudié le procédé de dosage de l’acide lactique basé sur le mesurage de l’extinction complexe du lactate de Fe3+. II a étudié avec des méthodes de statistique mathématique la corrélation entre la teneur en acide lactique et le degré d’acidité titratable des échantillons de lait cru et pasteurisé devenus aigres spontanément. II a établi qu’avec cette méthode Гоп peut établir le degré de l’estompage avec une précision de 1 SH.
