Verfasser analysiert die Lage der ungarischen Lebensmittel herstellung vom Standpunkte der Qualität. Er stellt fest, dass die Tendenzd er Qualitätsänderung — in mehrjähriger Perspektive beurteilt — positiv zu werten ist. Er beschreibt die Qualität von in verschiedenen (staatlichen, ratlichen, landwirtschaftlichen und privaten) Sektoren erzeugten Lebensmitteln und bestimmt die wichtigsten, zur Qualitätsverbesserung unumgänglichen Aufgaben. Die Analyse führte der Verfasser aufgrund der Angaben von industriellen und behördlichen Organen für Lebensmittelüberwachung durch. The state of Hungarian food production was examined by the author from the aspect of food quality. It was found that the trend of quality change is positive, on evaluating it in a period of several years. The quality of foods produced by the different groups of enterprises (government and county council plants, agricultural farms and private producers) is presented, and a survey is given of the most important tasks to be fulfilled in order to improve food quality. The investigation of the state of food quality in 1970 has been carried out by the author on the basis of the analyses performed by the food control organizations of the industry and of the regional state institutes for food control. L’L’auteur donne une analyse de la production des denrées en Hongrie. II constate qu’au cours des derniéres années la qüalité des produits s’est améliorée. II passe en revue la qualité des denrées produites dans les divers secteurs de I’économie nationale, comme le sont les usines de l’état, les usines municipales, agricoles et privées. II désigne les plus urgents devoirs qui servent á améliorer la qualité. L’analyse s’est effectuée ä la base des résultats obtenus par les organisations industrielles et administratives du controle des denrées.
