Der Verfasser beschreibt die Untersuchung des Nitratgehaltes der die natürlichen Weine beeinflussenden Faktoren: den Einfluss der Bewässerung der Trauben, die Behandlung mit Kunstdünger und Laubdünger, sowie die verschiedenen Berieselungs- und Sprühmittel auf die Gestaltung des natürlichen Nitratgehaltes. In der Arbeit wird die Änderung des Nitratgehaltes von Most in Abhängigkeit der Auslaugungszeit sowie in den verschiedenen Phasen der Kelterung beschrieben. Messungsresultate des Nitratgehaltes der aus diesen Mosten bereiteten Weine werden angegeben. The investigation of the factors affecting the natural nitrate content of wines is discussed. The effect of the irrigation of vines, of their fertilization and spray fertilization, further the effect of the various pesticide sprays and dusting agents on the level of natural nitrate content is described. Changes in the nitrate content of musts plotted against the duration of elution, and during the various phases of compression are presented. Data of measurements concerning the nitrate content of wines fermented from musts of this type are given. L’auteur rend compte de l’analyse des facteurs qui influencent la teneur en nitrate des vins náturels. II décrit l’influence de l’irrigation de la vigne, des engrais chimiques et du traitement ä l’engrais des feuilles, ainsi que l’effet de 1’atomisation et de la pulvérisation des agents chimiques sur la teneur naturelle en nitrates. La communication décrit le changement de la teneur en nitrates des moüts en fonction du temps de l’extraction ainsi que dans les diverses phases du pressage. L’auteur fournit des données sur la teneur en nitrate des vins obtenus а partir de ces moüts.
