Absztrakt (kivonat)

Die Arbeit bespricht die Bestimmungsmethoden der Aktivität der einzelnen pektinspaltenden Enzyme. Die Aktivität von Endo-polygalakturonase und Endo-Polymethylgalakturonase kann mit der viskosimetrischen, diejenige der Exopolygalakturonase mit der chromatographischen und diejenige der Pektintranseliminase mit der spektrophotometrischen Methode bestimmt werden; die Messung der Macerasen-Aktivität erfolgte vermittels des in dem Centralen Forschungsinstitut für Lebensmittelindustrie erdachten bzw. verfertigten Apparates und dortselbst ausgearbeiteten Verfahrens. In der Arbeit werden ausser den obenerwähnten auch noch die Bestimmungsmethoden der Aktivität von den an das Pektinmolekiil gebundenen Polysaccharide spaltenden Enzymen (Arabanase, Galaktanase und Xilanase) besprochen. Methods for the determination of the activity of certain enzymes participating in pectolysis are described. Endo-polygalacturonase activity and endopolymethylgalacturonase activity can be determined with the use of a viscosimetric method, exo-polygalacturonase activity with the use of a chromatographic method, pectin-trans-eliminase activity with the use of a spectrophotomctric method whereas macerase activity can be measured with the use of an apparatus and a method developed and constructed in the Central Research Institute for Food Industry. In addition to these, methods suitable for the determination of the activity of enzymes (such as arabanase, galactanase and xylanase) capable of degrading polysaccharides linked to the pectin molecule are discussed.
