Die Verfasser prüften die mikrobiologische (nichtpathogene) Kontamination von einigen in der konservierenden Industrie öfters angewendeten Zuschlagstoffen: von Gewürzen, Semmelbrösel und Zucker und berichten über die erhaltenen Resultate. Die aus dem Handel genommenen Gewürz-und Semmelbröselproben wurden auf Gesamtkeimgehalt und Schimmel, die aus fleischindustriellen Betrieben genommenen Gewürzproben ausserdem auch auf hitzebeständige und proteolytische Keime untersucht. Die Kontamination der Kristallziicker proben mit meaussophilen Keimen und thermophilen Sporen wurde nach ausländischen Normen gewertet, und auch mit früheren einheimischen Angaben verglichen. Of the additives generally applied in the preserving industry, the microbiological pollution of spices, bread crumbs and sugar was investigated and the data concerning contaminations are presented. In the samples of spices and bread crumbs withdrawn from the market total germ counts and moulds were examined, the spices sampled in the meat industry were investigated in addition to these also in respect of thermophilic and proteolytic organisms. Contamination of samples of granulated sugar by mesophilic and thermophilic spores was evaluated according to standards adopted abroad, and the data compared with earlier data established in Hungary.
