Abstract
Verfassern machten in Laufe seiner Untersuchungen die Erfahrung, dass Fäkalcoli in den zuweist verzehrten Lebensmitteln in bedeutender Menge enthalten ist. Da es sich in denselben auch vermehren kann, ist es eine Aufgabe der Lebensmittelindustrie und des Lebensmittelhandels, die Verringerung' der Colizahl auf das Minimum durch die Produktion hygienischer Lebensmittel, bzw. Sicherung einer entsprochenden Kühlung zu erreichen. In the course of investigations significant amounts of coli of faecal origin were found in foods consumed very frequently. Since these microbes are capable of multiplication in these foods, a reduction of the coli number to a minimum level should be attained by the food industry and food retailers by providing use hygienic production and adequate cooling of foods. Lors de ses expériences l’auteursa observé que les bactéries coli de provenance de féces se trouvent dans les denrées le plus souvent consommées dans un nombre élévé. Comme elles peuvent s’y multiplier l’industrie alimentaire et le commerce des denrées doit considérer comme devoir primordial la diminution du nombre des bactéries coli á un minimum, en assurant la production hygiénique des denrées ainsi que leur réfrigération convenable.
