Absztrakt (kivonat)
Die Verfasser geben eine Literatu rübersicht über den gegenwärt igen Stand der Kenntnisse auf dem Gebiete der Obstbräunung, mit besonderer Berücksichtigung der Polyphenole, als Substrate der enzymatischen Bräunung. Auf Grund vergleichender, zur quantitativen Bestimmung der Polyphenole geeigneter Untersuchungen beschreiben sie die beiden sich am besten bewährenden Methoden. Sie teilen einige Angaben über den Polyphenolgehalt der einheimischen Früchte und Obsterzeugnisse mit. The present knowledge of phenomena connected with the browning of fruits, particularly in the field of polyphenols as the substrates of enzymatic browning is surveyed by the authors on the basis of data of literature. Based on a comparing examination of various methods suitable for the quantitative determination of polyphenols, two methods of determination are described which proved to be best suited for this purpose. Data are given in respect to the polyphenol content of Hungarian fruits and fruit products.
