Abstract
Die Verfasser bestimmten die qualitativen Kennzeichen und die chemische Zusammensetzung der aus dem in Ungarn verfertigten getrockneten Suppengrün und anderen Zusätzen hergestellten Suppenerzeugnissen. Sie verglichen dieselben mit auch in anderen Ländern hergestellten entsprechenden Produkten und stellten fest, dass sie mit denen in organoleptischer und biologischer Hinsicht gleichwertig sind. The qualitative features and the chemical composition of soup preparations made in Hungary from dehydrated vegetables and other additives were examined by the authors. On comparing these preparations with the ready-made products of other countries, it was stated that the Hungarian products possess the same palatibility and biological value. Les auteurs ont établi les caractéristiques qualitatives et la composition chimique des conserves de soupes préparées en Hongrie en portant de légumes séchés et d’autres matiéres additionnelles: I Is les ont comparées avec des preparations adequats d’autres pays et ils ont établi que leur valeur de jouissance et biologique en est identique.
