Abstract
Die Verfasser führten mit dreierlei Wassergehaltsbestimmungsmethoden vergleichende Untersuchungen zur Feststellung des Wassergehaltes von Salonzucker und Rübenzucker aus. Auf Grund ihrer Ergebnisse stellten sie fest, dass das Acetylchloridverfahren sich zur Bestimmung des Wassergehaltes von beiderlei Substanzen eignet. Comparative tests were carried out by the authors with three different methods of determination, in order to establish the water content of fondant preparations and beet sugar. On the basis of the experimental results it was proved that the acetyl chloride method lends itself to the reliable determination of water content in both substances. Les auteurs ont effectué des essais comparatifs avec trois méthodes pour le dosage de la teneur en eau des papillotes et du sucre de beturave. Ils oht etabli que la methode au chlorure d’acetyle est bien applicable pour le dosage de la teneur en eau de ces deux substances.
