Verfasser empfiehlt als vereinfachte Methode zur Bestimmung von Fruchtund Milchspeiseeis die Messung des spezifischen Gewichtes im Filtrat der im bekannten Volumenverhältnis verdünnten und nach Carrez geklärten Lösung. Der der Windisch-Tabelle entnommene Extraktgehalt stimmt mit dem mit chemischen Methoden ermittelten und in Invertzucker angegebenen Zuckergehalt gut überein. Zur Vereinfachung von Serienuntersuchungen empfiehlt cfer Verfasser als zweites Verfahren die polarimetrische Zuckerbestimmung. Vergleichende Prüfungsresultate unterstützen die Verwendbarkeit der empfohlenen Methoden bei der Untersuchung von Speiseeis. A simplified-procedure is suggested for the determination of the sugar content in fruit and milk ice-creams. This consists in the measurement of the specific gravity of the filtrate of a sample diluted to a known volume ratio and clarified according to Carrez. The extract content read from the Windisc’n table is practically in a fair ^accordance with the sugar content (grams per liter) determined by chemical methods and expressed as invert sugar. As another simplified method, the polarimetric determination of sugar is recommended. The applicability of the suggested methods is supported by comparative tests carried out by the author.
