In der Einleitung schreibt der Verfasser über die Gewinnung der Eiweissstoffe und Reinigung ihrer Lösungen. Weiterhin beschreibt er die Trennung der Aminosäuren und Peptide mit verschiedenen Methoden der Elektrophorese durch Unter-, Mittel- und Hochspannung ausführlich. Die Trennung der Eiweissstoffe beschreibt er besonders mit den Gelelektrophoreseverfahren, mit besonderer Rücksicht auf die Prüfung der Weizeneiweissstoffe. Ausführlich bespricht er die Untersuchung vermittels Gelelektrophorese der Gliadin- und GluteninFraktionen. Zum Schluss gibt er eine kurze tabellarische Übersicht über die Prüfung durch Elektrophorese einiger anderer Verbindungsgruppen. In the introduction, the separation of aminoacids, peptides and proteins, and the purification of their solutions are described by the author. Later, the separation of aminoacids and peptides by methods of low, medium and highvoltage electrophoresis fs discussed in detail. For the separation of proteins mainly gel-electrophoretic techniques are described, with particular respect to the investigation of wheat proteins. The investigation, by gel-electrophoresis, of the gliadin and glutenin fractions is presented in detail. Lastly a short tabular survey is given of the electrophoretic investigation of some other nitrogenous groups of compounds.
