Der Verfasser gibt auf Grund der Untersuchung zalhreicher Eiweissstoffe und freier Aminosäuren in Nahrungsmitteln praktische Hinweise für die papierchromatographische quantitative Bestimmung der Aminosäuren und teilt Verfahren mit, welche sich zur Ausschaltung der die Chromatographie und die Analyse störenden Einflüsse eignen. Zur quantitativen Auswertung der Papierchromatogramme empfiehlt er neben der absoluten quantitativen Auswertung von Chromatogrammen zwecks Schnellbestimmung die Vergleichung der relativen Mengen der Aminosäuren, ähnlich wie bei der Auswertung von Elphogrammen oder Gaschromatogrammen. On the basis of experiences gathered in the determination of the contents of protein and free aminoacids of a great number of food varieties, the practical techniques the quantitative determination by paper chromatography are described by the author. The modes of eliminating the effect of substances interfering with chromatography and with the analysis in general are discussed. For the quantitative evaluation of paper chromatograms, in addition to the absolute quantitative evaluation of the densitograms, the comparison of the relative amounts of aminoacids is suggested for rapid determinatons, similarly to the conventional evaluation of elphograms or gas chromatograms.
