Ein Bericht wird über die Ergebnisse der Laboratoriumsuntersuchungen jener Muster vorgelegt, die während der Kontrolltätigkeit des Lebensmittelhygienischen Inspektorats der Tierhygienischen Station der Hauptstadt Budapest von den Endprodukten der Fleischindustre als Stichproben oder als Partiequalifizierproben in den Jahren 1976—1980 entnommen wurden. Dabei wird es versucht, gewisse verallgemeinbaren, die Gestaltung der hygienischen „Qualität“ kennzeichnenden Folgerungen von jenen Beurteilungsergebnissen zu ziehen, die in einer komplexen Weise auf Grund der vom Standpunkt der. Konsumierbarkeit wichtigen Eigenschaften (durch eine gemeinsame Berücksichtigung der sensorischen Eigenschaften, der Zusammensetzung und des mikrobiologischen-toxikologischen Zustandes) festgestellt wurden. Die Untersuchungserbegnisse bei denen die Entwicklung der hygienischen Qualität der Fleischprodukte der staatlichen Unternehmen ausführlich beschrieben wird, werden zugleich mit den entsprechenden Angaben des letzten Fünfjahrplans bzw\ mit den Ergebnissen anderer Herstellungsbetrieben verglichen. Diese Angaben sind in zwei Tabellen und zwei Abbildungen zusammengefasst. Auf Grund der Analyse der Untersuchungsergebnisse von 6 429 Mustern ergibt sich während der betrachteten fünf Jahren eine 4,2%-ige Abnahme der betrieblichen Fehler bzw. eine 0,8%-ige Abnahme der kommerziellen Fehler der Fleischprodukte der Grossbetriebe der Fleischindustrie. A report is given of the results of laboratory investigations of samples withdrawn in the years 1976—1980 during the control activity from the end products as random samples or as batch qualifying samples during the control activity as a routine work of the Inspectorate for Food Hygiene of the Station for Veterinary Hygiene of the capital Budapest. An attempt is made to draw conclusions characterizing the shaping of the hygienic “quality” suitable for generalization, from the results of evaluations which have been established in a complex way on the basis of properties of importance from the aspect of the consumability (such as a simultaneous consideration of the sensory properties, of the composition and of the microbiological-toxicological state). The results of investigations including the development of the hygienic quality of the meat products of state enterprises are described in detail, comparing them at the same time with the corresponding data of the preceding Five-Year Plan, and with the data of other plants of the meat industry. These data are summarized in two tables and two figures. On the basis of the results of investigations of 6429 samples, faults of industrial origin of meat products of large-scale plants decreased by 4,2% whereas faults of commercial origin decreased by 0,8% within the examined five years.
